No, we never add water to Anchor™ milk. The only difference is the proportion of the cream we skim off. This might change the consistency and fat content but Anchor™ Lite and Trim milks still contain the same essential nutrients as Blue milk, just in slightly different proportions. The main difference other than fat content is the amount of vitamin A which is a fat soluble vitamin and so will be present in lower quantities in lower fat milks.
