Serves 10
2 tblsp olive oil
1 large onion
3 rashes of chopped bacon (optional)
2 sheets of reduced fat savoury pastry
3 cups of chopped vegetables (broccoli, frozen peas & corn, pumpkin & kumara)
1 pottle of 99% fat free cottage cheese
4 eggs beaten
1 cup Anchor Super Trim milk
salt & pepper to taste
Heat the oil in a frying pan, add onions and cook over a medium heat until soft, add the chopped bacon and cook for a further 3 minutes. Chop up vegetables and cook on high for 4 minutes in microwave. Add these to the cooked onion & bacon mixture. Place the sheets of pastry over the base of a well greased square baking dish, fill with half the vegetable mixture, then cover with the cottage cheese, top with the remaining vegetables. Place the eggs and Anchor Super Trim milk into a bowl and beat on high until well mixed, pour this over your vegetables, garnish with salt and pepper.
Cook in a preheated oven at 180°C for about 40 – 45 minutes or until golden brown. Serve with a fresh garden salad.
